Udi’s Gluten Free Quesadillas
Being gluten-free, there has been some trial & error with finding good alternatives to wheat. One of my favorites for quite awhile has been Udi’s. Not only do they nearly make everything you can imagine, sans gluten (Bread, hamburger & hot dog buns, bagels, cakes, cookies…) but I love how accessible they have become in the few years I have been gluten-free; I see their products at Wal-Mart & Trader Joes!
You can imagine my nerding out when Udis was sweet enough to send me a package of goodies…some of which are long gone since I nearly devoured it all when it came in 😉 (Psst, the salty caramel cookies are a must try!) but one of the contents I got was their large corn tortillas, perfect for quesadillas, which I have said farewell to pretty much as most are made with flour.
Mike & I did a bit of a cook-off afew nights ago; each making our own kind of quesadilla. I cooked the tortilla for a bit on both sides in the frying pan, then filled ’em up with cheese, olives, jalapeno, guacamole & salsa. The turn out? My friends, Mary is eating quesadillas again!
Their large tortillas cooked up nicely & did not break too much, they were easy to flavor, too….
My Boyfriend went the meaty-man route, his had bacon bits & instead of cheddar, he chose shredded mozzarella. The ideas are endless & it’s also a great & fun way to let a child feel like they’re making, creating their own meal.
Dessert was Udi’s chocolate brownie bites, which are great. I had both of these items in the freezer & they seem to hold up just fine.

February 10, 2014 at 7:51 pmOk, now you’ve done it. I must try those salted camel cookies. I just néed to find them. 🙂 I think tortillas are way overlooked. They are super versital and act as a great foil for many kinds of ingredients. Now I need to go eat … LOL. 🙂
