Traditions with Betty Crocker & Contest ends 12-11! #ad
I don’t know about you, but I am still thinking about, & somewhat recovering, from all the abundance of family, fun & FOOD I enjoyed the last week for Thanksgiving. While we’re still enjoying the leftovers, something that I always insist on making fresh is my veggies (like eggplant) & my Betty Crocker mashed potatoes, mainly because there’s never any leftover of our favorite potatoes like Butter & Herb, or Garlic. The ultimate comfort food, & just is so perfect for these cold winter nights we finally have here in LA.
If you’re thinking, wait, she wrote, eggplant?! That, I did. Growing up, that was one of my Grandma’s favorite side dishes to prepare for holiday dinners, & it was so cool to discover that Michael’s Aunt Violet loves her some eggplant, too. Since Betty Crocker is all about #ABettyTradition, I thought, why not combine 2 of my food traditions together? So, I decided to cut up some eggplant to crumble on top of my Betty Crocker mashed potatoes. The verdict? Why had I not sooner!?!
I learned a great tip from Aunt Violet, too: Broil your eggplant. Here is what I did for this simple, yet delicious way to enhance your mashed potatoes:
Prepare your Betty Crocker mashed potatoes as the package instructs you to
Thinly slice the eggplant, drizzle some olive oil on top, as well as any other herbs you think might be good (I like pepper, rosemary, garlic…)
Broil on each side for about 5 minutes each side (I broiled on low)
Once both are ready, voila! Give eggplant a try as a new side dish along with your Betty potatoes.

December 1, 2015 at 9:39 pmEvery year my mom makes Christmas Eve dinner for my immediate family and it ALWAYS includes Betty Crocker scalloped potatoes. As a vegetarian, it’s one of the things I can enjoy with the rest of my family while I eat my meat substitute. 😉 It’s always a special meal that we follow with a trip to my godmother’s house to exchange gifts before our big Christmas the next day.

December 1, 2015 at 10:03 pmMy Mom wasn’t the best cook but as my best friend she did teach me the basics and then I ran with my own ideas. You can’t just always have just potatoes, so I would make Betty Crocker Scallop potatoes and add, Ham, green onions, bell peppers (all colors), and bake.
Besides being delicious it had a colorful look.
We eat with our eyes, so make it look good.

We didn’t grow up celebrating Thanksgiving turkey in our culture but later with influence from our school peers, we adapted the tradition and now serve all the yummy traditional sides that go with a turkey dinner. Mashed, scalloped or au gratin. Love them all!

We have both Baby Jesus and Santa Claus, we eat Colombian dishes and also American ones. We have a nativity set and a Christmas tree.

I would taste and try to figure out what she was adding to her recipe. I could never duplicate it and finally begged her for her recipe. We all got a huge laugh when she admitted she was using Betty Crocker’s with freshly fried and crumbled bacon. Yum!
