“The Study of Custom Pizza” at Pieology.

While “Build Your Own (insert dish here)” and “Fast/Casual” dining has seriously become all the rage here in LA, it can be overwhelming sometimes trying to find the best ones. Throw in being gluten-free, and it makes the search for the best even more difficult. Luckily, for me, when I am craving a pizza, my go-to has quickly become Pieology Pizza. After I tried them a few years back, I have been pleased to see them popping up more and more around SoCal. So, when they reached out to me to come visit them in Northridge, you can bet I was there in a heartbeat.

Oddly enough, the evening we went happened to be #NationalPizzaDay! 🙂 When you enter the ordering line, you decide what goes on your pie, right down to the crust. I love that before you decide on a sauce, you have the option to start off your crust with olive oil or herb butter. Mike tried out the butter, while I was all about the olive oil. After they asked me if my gluten-free order was due to an allergy or a preference, they quickly changed their gloves and made sure to show me that the sauce bottles being used for me were labeled, ‘Gluten Free”. I love it when a restaurant takes my allergy so seriously.

For a flat price, you can put on as many toppings as you wish. I, of course, went to town with my veggies. While I think there’s room for a few more choices, it was great to see both black and kalamata olives, and plenty of meats (If that’s your kind of thing).

While I waited for my veggie creation and Mike his pepperoni, we decided to split one of their salads boasting mixed greens, spinach, cranberries, walnuts, gorgonzola cheese and a delicious raspberry vinaigrette. We enjoyed it, only thing? The gorgonzola cheese should be replaced with feta. Gorgonzola is good for a bite or two while sipping a great glass of wine, but, on a salad? It was too over-powering for our taste. Other than that, it was extremely satisfying….and, my plan was to load up on our starter and just have a slice or two of my pizza. Theres a laugh!

Our pizzas arrived very promptly and were mouth watering. Often,  I don’t like how many gluten-free crusts are thin and crispy, so, Pieology is easily one of my favorites as its more soft. Their cheese is flavorful and rich, while the toppings were baked to perfection.  I ended up only having 2 of my 7 or 8 slices left for leftovers.

I did notice one thing missing, and Pieology must think so, too: There was no beer or wine, but, I was happy to see a sign announcing its coming soon! Reason enough to check back soon, no?

If you’re in the Southern California area, Pieology is a great choice for everyone who loves pizza. Along with gluten-free crusts, they also have vegan cheese and of course, their famous Sweet Cinnamon Sugar Strips, made on a pizza crust. What could be better than this?!
