Mustard Salmon Dinner from New Paleo Book, Elana’s Pantry!
Afew weeks ago, I reviewed the new book, Paleo Cooking from Elana’s Pantry & offered a giveaway that now has a winner, kick butt blogger, Chris Lam (Congrats, Chris!). With that post, I featured a gluten-free brownie recipe & have since thought I might have been jumping past dinner straight to that delicious dessert 😉 Another excellent idea you will find in the book is Elana’s mustard salmon fillet:
Mustard Salmon Fillet
Serves 4
1/2 pounds wild salmon fillet
1 cup Dijon mustard
Preheat the oven to 400°F. Rinse the salmon and pat dry. Place the salmon skin side down in a 13 by 9-inch baking dish. Spread the mustard over the salmon. Bake for 15 to 20 minutes, until cooked through, then serve.
