Gluten Free Vegan Oatmeal Raisin Banana Bars!
Imagine just opening up your fridge & instantly having oatmeal with cinnamon, a cup of almond milk & your morning banana all in one? Well, my friend, Allie, clued me in to a great breakfast treat, that can be served as a cookie or a bar & includes all of those ingredients plus more! We’re both headed on road trips & you can never have too many snacks to pass the time. I decided to attempt making these last night, & they didn’t come out bad for a 1st try if I do say so myself! Great bonus: They are gluten free AND can be vegan!;-)
Heres what you’ll need….
3 bananas
1/3 apple sauce
2 cups dried (un-cooked) oats
1/4 milk (You can use any kind…I used almond milk)
1 tsp vanilla
1 tsp cinnamon
1 tbsp sugar (I used brown, but again, any kind or even a sugar subsitute would be fine)
1 cup of raisins (*You can subsitute or even add in nuts if you like, too–you really can bre creative with this recipe!)
Pre-heat your oven to 350, mash up the bananas real good & then add in the rest of the ingredients. Let the mix sit for about 5 minutes as that helps the oats really set in. Grease a baking pan or cookie sheet (I used dairy butter, but any kind goes!) then pour the mix onto the pan/sheet, smoothing it out as you get it all in.
Cook in the oven for about 20 minutes. Keep in mind, even once they’re done, it will still seem moist as the oatmeal will keep it from becoming harder like a ‘regular’ cookie.
I cut mine into long squares a la an energy bar. You could even freeze them, too. If you try it out, please let me know what you think!:-) xo
