Gluten Free Shrimp Stir Fry Dinner….

Since I have started seeing Michael, I am absolutely loving cooking for 2 & attempting to dream up new dishes. Recently, when I was to go over to his casa, I was craving an Asian cuisine evening & we decided to try out a shrimp stir-fry. What is great about a recipe like this, you can literally add in anything you like. Here’s what we chose….

At Whole Foods, I grabbed their Coastal Blend veggies in the freezer section & that included broccoli, carrots & corn. Over at frozen seafood, I lucked out with a pound of shrimp for under $9. We started out thawing the shrimp then frying them in the pan with some oil.

Next up, we fried up the veggies while we boiled the rice stick noodle. The recipe we used listed rice, so this is one of the ingredients you can decide on. I felt like a pad Thai style dinner, thus, why I opted for the rice sticks, which were a little long & chewy, but still really good. Next time, we may boil them longer….

When it was all said & done, we busted out the wine & plenty of gluten-free soy sauce…all from Whole Foods…

All in all, a simple, satisfying dinner in under an hour….why run the risk of fried gluten & wheat from a Chinese take-out when you can whip up a stir fry yourself? 😉 xo

I agree, Anything that you make yourself always offers a better taste, and of course, you know what’s in it. It does look yummy. 🙂
