Happy Cinco de Mayo, quarantine edition! While I know most of us had planned on an epic Taco Tuesday celebration, guess what? We’re still safer at home. Mike and I have been trying to make the most of this “pause”; finally hanging up paintings, going through miscellaneous stuff, and enjoying our favorites for takeout while supporting local.

Despite going out to party is on hold, there’s plenty of options to have a festive Cinco de Mayo at home. Here at the Farah Casa? We’ll be celebrating with Rubio’s Coastal Grill and trying out their new Family Taco Kit, an ideal way to stay safe at home and still enjoy your favorite tacos, all while supporting the San Diego-based chain.

I first discovered Rubio’s ten years ago when I’d moved to Long Beach. Living by the California shore, tacos were aplenty. Having been a burrito gal all of my life, I suddenly found myself rather forced to love tacos once I had to go gluten-free. It was an easy dish to fall for, and among my favorites in town? Rubio’s, of course.

Although a chain with restaurants throughout California, Arizona, and Nevada, Rubio’s still feels small and independent. No matter which location I find myself at, the staff is always attentive and goes above and beyond to accommodate my needs.

While some dishes do come with flour tortillas, not to worry; Rubio’s all but encourages folks to vary up their order. Founder Ralph Rubio loves seeing his customers make healthy choices and customize how they would like their plates. Rubio’s Introduces Family Taco Kit

Available for $29 for a limited time and just in time for Cinco de Mayo, the taco kit includes a choice of all-natural grilled chicken, USDA choice steak or grilled shrimp,“no fried” pinto or black beans, lemongrass citrus or Mexican rice, toppings (guacamole, romaine, shredded cheese, chipotle sauce, and mild salsa)  plus a mix of eight corn and flour tortillas and tortilla chips. Serves 4- 5.

Operations at Rubio’s have shifted greatly due to our pandemic. While food safety and cleanliness have always been top-of-mind at Rubio’s, new initiatives include tamper-proof seals on all delivery orders, and curbside pickup now offered in over 95 percent of the restaurants.

“We quickly shifted our business model to pick up and delivery,” said Rubio. “We’re all in this together and are grateful to everyone who orders. Every meal helps keep the majority of our restaurants open, keeps people employed, and enables us to give back by feeding frontline healthcare workers in our communities.”
